Rougail Z’oeufs ((Creole spice eggs)

The ROUGAIL Z'OEUFS traditional dish from Reunion Island, is as delicious as little expensive

So it's ideal for the gourmands and the end of the month

There are several ways to prepare this dish, every family having the favourite recipe

I offer you one today such as prepared by my mother when we were children

Ingredients :

  • 6 eggs

  • 5 tomatoes

  • 2 onions

  • 4 cloves garlic

  • Salt, Peper

  • Thyme, Ginger, Chili pepper (optional)

  • 1 teaspoon of turmeric

  • Oil

  • Parsley ou Green onions for the decor

Method :  

  1. Cook hard-boiled eggs, cut them in half, set aside

  2. Cut onions and tomatoes

  3. Crush the garlic with thyme, ginger and the chili peppers (optional)

  4. In a pot, fry onions in the oil until they are translucent

  5. Add tomatoes, spices, turmeric, 25 cl of water and let simmer delicately

  6. Once the sauce thickened, add halves of the eggs one by one by taking care of keeping them intact

  7. Sprinkle with parsley, or with chiselled green onions
